The Importance of a Sharp Knife

A sharp knife is safer

A dull blade is more dangerous to use than one that is sharp.  A dull blade requires more pressure to cut, increasing the chance that the knife will slip due to the greater force the user needs to apply when cutting. A dull blade will slip, which makes it difficult to control and increases the risk that it will slip in to your finger. With a dull knife, it’s only a matter of time until you cut yourself. A sharp blade is predictable. When it strikes down or is drawn across the cutting surface, it won’t slip.  The sharp edge will “bite” the surface, making it easy to control how the blade moves through the material.

A sharp knife makes better food

There are many benefits to working with a sharp knife in the kitchen.  Decreasing the force needed to make the cut means less damage to the material.   When working in the kitchen, delicate ingredients- like herbs and vegetables- will look fresher for longer if you slice through them cleanly.  A dull knife will crush more of the cells surrounding the cut, speeding up wilting and discoloration.

A sharp knife is more fun!

Once you know your knife is sharp and that it's not going to be a chore to get the cutting job done, it makes it much more enjoyable to use.  Your work is easier and more fun!
